So, this is what happens if you don't realize you're pouring in bath wash because it's clear, and so you just keep pouring, and pouring, and pouring.....and then you turn on the jets.....but it's a great way to keep 3 very rambunctious (is that really a word?) kids quiet (okay, not quiet, but at least contained) for a solid 45 minutes! I think a little more soap and we could have had an Ethel and Lucy incident....... love you all! Wish those NC babies were here to enjoy those bubbles! Next trip, for certain!

Mi Queso Es Su Queso

I have been telling mom I would send her my recipe for "non-dairy cheese sauce" for a wile so here it is for every one to try. I think it may be a stretch to say it tastes like cheese, but If you haven't had cheese in a wile it does satisfy that creamy melty texture you may be missing in stuff. I have put it in burritos, on tacos, and even on pizza by replacing the cumin with Italian seasoning. pretty good stuff. You kinda have to play with the amount of almond milk to get the right drizzling consistency. My favorite way to eat it is to put a couple of tablespoons of diced pickled jalapenos in and dip corn chips in it. Good stuff for sure.

You will need:

2 Tbsp. Non-Dairy Butter
1/4 C. Flour
1 C. Almond or Soy Milk ( I use Original Almond, but not Un-sweetened or Vanilla)
1 tsp. Garlic Powder
1/4 tsp. Dry Mustard
1/8 - 1/4 tsp. Ground Red Pepper
1 tsp. Salt
1 tsp.Cumin
1/4 C. Nutritional Yeast

Melt the butter in small pan, add flour and whisk for about a 1 min. I like to add all seasonings before the milk so they don't clump up. So stir them in and then start adding the milk a little at a time. Think moms gravy here. Keep whisking with each addition of milk to keep out all of the lumps. When everything is smooth and pretty then add your 1/4 cup of Nutritional Yeast. Once that is dissolved your done. Don't let it keep bubbling or it will get thicker and thicker. I know cause I did it. It WILL turn to play dough if you keep simmering it!  Now just add more milk if you want it drizzling consistency, or DO let it bubble a little and then cool if you want to spread it. Because this does thicken so well I wonder if you could chill it and then use it like cream cheese, with out all the added seasonings. Maybe in a .......well I just forgot all the uses for cream cheese, but I bet Kate could spout off about 500 of them at any given time. Hope you all like it.
